Blueberry Cake… yummy!
My friend and I had a baking day on Saturday, and we decided on baking a blueberry cake! Mmm hmm it was amazing. We tweaked a recipe from one of my baking magazines, and this cake did not even last till the end of Sunday! (No we didn’t eat it all by ourselves…)
175gr butter (softened)
175gr caster sugar
225 gr self raising flour
1 tsp baking powder
4 tbs sour cream
1 tbs vanilla essence
250gr cream cheese
150gr icing sugar
1 tsp vanilla essence
fresh blueberries (we used a 125gr tub from Pick n Pay)
*preheat the oven to 180*
Beat the butter & sugar till light and fluffy, beat the eggs in one at a time (we had to add a tiny bit of flour to stop the mix from curdling) Mix in the flour & baking powder. Add the sour cream & vanilla.
Pour the batter into 2 shallow cake tins and bake your cake for about 25 minutes (till it is goldeny brown and firm to touch).
Beat the cream cheese with the icing sugar and vanilla essence till it is super creamy and delicious!
Spread half of your icing mix on one of your cake halves and place the other half on top and ice the top of the cake. Top with the blueberries and it is ready to eat!

Let me just tell you though, when I was getting the cakes out of the oven I somehow managed to drop one of them upside down onto the bottom of the oven – which was super fun trying to get out. But totally worth it. You have to try this one… Bon Apetite.
