Chocolate Pistachio Biscotti
Biscotti! Yum! This recipe results in biscotti that have a kind of brownie vibe to them So good!
It is possible that I didn’t bake these for long enough cause they were a little chewy in the middle, but I like them like that.
6 (heaped) tbs butter, softened, plus extra for baking tray
2 cups flour
1/2 cup cocoa
pinch of salt
1 cup sugar
2 large eggs
1 cup shelled pistachio nuts (I had unshelled nuts, which were not easy to shell, so rather just get shelled from the beginning)
1/2 cup chopped dark chocolate
1 tbs vanilla essence
*preheat the oven to 180*
Beat the sugar and butter till light and fluffy. Add the eggs & vanilla and beat till well combined.
Sift together your dry ingredients and beat in egg mixture. Mix in your nuts and chocolate bits till you have an even spread – I ended up using my hands here because the spoon wasnt really working and just got all sticky.
Make your dough into a loaf… and bake for 30 minutes.
