Gluten Free Apple Crumble
Having followed WhiskingIt and all it’s yummy recipes through my bestie Lexi I am so excited to have been invited to be part of this delicious blog! As Lexi has mentioned before I will be focusing on the sweeter side of life (desserts, pastries, cookies, donuts, brownies, tortes, pancakes, cakes, cupcakes…. we could be here all day), hopefully showing you that just because it’s sweet doesn’t mean it’s unhealthy!
On that note I would like to share with you one of my favourite and most decadent gluten free, sugar free, dairy free desserts: The “Sinless” Cinnamon Apple Crumble.
The first thing you need to know is that this delightful dessert is dead easy to make, in both technique and preparation time. It’s the perfect answer to a last minute dinner party or surprise addition to a Sunday lunch. The combination of apples and crunchy crumble make for a really sweet and delicious desert with a beautiful texture. So delicious in fact that I made this exact desert three times in one week over the Christmas holidays. This desert is really dynamic in that you can vary it’s degree of sinfulness via your choice of compliments (everything from the ultimately devilish full cream ice-cream to a healthy handful of blueberries).
On the sentimental side, this combination of apple and spices brings on warm fuzzy memories of sharing an apple crumble with my mom. Almost daily, after school, my mom used to stop at a café near our house to pick up rolls for lunch, but every now and then we got an apple crumble from the bakery (that we drowned in cream!!) to share at home. I think we both felt less guilty about sharing one and obviously sharing is caring <3
I believe that you will find this recipe surprisingly easy to make, with the added benefit of being a natural crowd pleaser. I really hope you enjoy this recipe as much as I do!
Baker’s tip: Make sure your crumble is not too dry and not too wet. When it is sticking to your hands you should add some more flour (a little at a time), and when it is not forming a wet crumb try adding some more chilled (i.e. not melting) butter.
PS: I whipped up some coconut cream with a dash of vanilla essence to serve with the apple crumble (you’ll need to use an electric beater or you’ll be whipping forever)
- 6 cups thinly sliced, peeled apples (8 medium)
- 1 cup of boiling water
- 1 tsp. ground cinnamon
- 150g (1 cup) gluten free brown rice flour
- 100g (1/2 cup) coconut sugar
- 110g chilled butter, chopped into cubes
- 50g (1/2 cup) gluten free oats
- 1 tsp. ground cinnamon
- Preheat your oven to 180°C. Grease 6 small ramekins and set them aside.
- Place the apples, boiling water and 1 teaspoon of cinnamon in a large pot. Boil the apples over a medium heat until softened (approx. 15 minutes). Drain the apples from the water and place aside for later.
- In a large bowl combine the flour, oats, sugar and 1 teaspoon ground cinnamon.
- Using your fingertips, rub the butter into the flour mixture until the mixture resembles fine breadcrumbs.
- Spoon the filling into the ramekins. Scatter the crumble mixture evenly over the apples.
- Bake in the oven for 20-25 minutes or until golden.
- If you want to try something different you can add: a handful of raisins, or a handful of walnuts to the mixture for added flavor. Additionally if you struggling to find coconut sugar (because it’s a rare find) you can try substitute it with 1 teaspoon of honey and a ¼ teaspoon of stevia.
