Oreo cheesecake squares
So apparently Oreo cheesecake is “trending” at the moment… I must say my knowledge of trends (especially internet ones) come only from my deep addiction to Pinterest. However, Twitter-ers and real bloggers, better Facebook-ers than me, true Instagram-ers and definitely people who know how Google Plus works (wtf) probably know way more abotu what foodie recipes and food blogging trends are happening right now. So maybe I am wrong about this. However, I have noticed that all the international food bloggers and the general vibe on the internet (again I just mean Pinterest) do seem to follow patterns… one week everyone was posting banana bread recipes, last year was all about macarons, now apparently “cronuts” are a thing?
I am just pretty bad at keeping up with it all. Some people tweet all day, Facebook picture status updates and “check in” (which by the way my mother had to show me how to do the other day…… eek.), instagraming every day meal and their feet in 20 different situations every day AND they have real jobs (I am assuming) … and I can barely manage posting a blog post every two weeks if that. (Side note, for those of you who do really care, I am sorry that I have been such a colossal failure as a blogger, being busy isn’t really a great excuse, so I am just going to say that it WILL get better ^_^ )
Anyway my point – relating to this post in particular – is that I usually bake my friends their pick of a something something for their birthdays. But lately… I have even been slacking on that front. My already very small collection of fantastic friends is soon going to start dwindling if I dont get my act together … but this birthday cake (the Oreo cheesecake) was for my more-than-a-friend-person. And even this time I was a week late on delivery. SO SLACK. But, it was pretty delicious and, I mean, since Oreo cheesecake is “trending” I had to do a post on it.

Makes 12 squares in a 25cm x 28cm baking pan.
1/3 cup melted butter
2 cups cream cheese
1.5 cups sugar
1/2 cup cream
1 tsp vanilla extract (2/3 if you are using essence)
15 oreos roughly chopped
250ml fresh cream
150gr milk chocolate roughly chopped
* preheat the oven to 180 *
Pulse the oreos in a blender till you have fine-ish crumbs.
Add the melted butter and pulse some more.
Line a pan with foil – so that the foil folds over the edge of the pan to form “handles” for when you need to lift the cheesecake out later.
Press the Oreo mix down in an even layer on the bottom of the pan – I used a whiskey glass to press it flat.
Beat the cream cheese with a hand held mixer.
Add the sugar and beat till combined. Then add your eggs, cream and vanilla and beat some more.
Fold in the Oreos and bake for 45 minutes (Or until the edges are golden brown but the middle is still slightly wobbly – I over baked mine a tad, still delicious but could have been a bit more gooey)
Heat the cream in a double boiler – or in a bowl over a pan of simmering water. Add your chocolate and whisk until smooth. Once it is super smooth put it in the fridge to cool and thicken up. It should take about an hour until its formed a nice thick ganache.
Leave the cheesecake to cool once finished baking, when its completely cool (takes up to 2 hours) spread the ganache over the top forming a nice thick layer. Cut your cake into squares and serve – I like mine with milk :) Yummmm.
