Paleo Chocolate Chia Breakfast (Or Pudding)

OHMIGOSH. So the last 4 weeks. Non. Stop. Every. Minute. Of. Every. Day. ALL. DAY. “All DAY Son!”

I have been super blessed with the freelance work recently. Which is kind of both a blessing and a curse. The money is SO great. But the time… What is it about August? July/August every year, my life becomes the stage for the craziest nutso circus in town. So I have been working  A LOT. I am also a bridesmaid at my friend’s wedding – which is 30th of August. So between the real life job, the freelance, having to do mundane things like eat, sleep and shower, I am organising kitchen teas and bachelorette parties and gifts (which I LOVE, but wow is it time consuming – also cause I am so amped when it comes to gift giving I always wanna make sure mine is the most bestest, coolest, thoughtful-est gift ever). So gogogogogogogo go. Don’t forget to breathe. PHEW. There are only so many lunch breaks in a week and so many hours in an evening before one NEEDS SLEEP. And never-even-mind the amount of stuff on the weekend.
Speaking of – this past week I was at Oppikoppi. I go every year, and every year is amazing and super fun and all that rock & roll, but this year.. this year I realised that I am past the age where you can drink/party/stay up all night for 3 nights in a row, not shower for 4 days and eat bread and chips for breakfast lunch and dinner… sometime between last year September and this year August I became an old lady. It’s true. I can’t anymore. On the last night – the biggest night – the night of all nights with all the big bands and DJ’s I was in my tent under my blankets dressed in a thousand layers by 11pm. Which in Oppi-time is the equivalent of 7:30. Eish.

On the plus side – in 3 weeks all of the bridesmaids duties will be over and I get to stand in a pretty turquoise dress and watch one of my best friends marry one of the coolest guys ever! sheesh I am tearing up just thinking about it. I am gonna be one of those sobbers at the wedding that makes sniffing muffled wailing sounds in the front row. AND ruins the make up that cost a bunch of money to make me look half way pretty ;) 

So in between all the crazy I made a delicious little breakfast – which literally takes 5 minutes prep and 5 minutes to complete. And probably 5 minutes to eat depending on how hungry you are.





Chocolate Chia Breakfast (Or Pudding)
Serves 3
A super fancy pancy delicious chocolate breakfast that is dairy free, gluten/grain free and refined sugar free!

  1. 3 tbs chia seeds
  2. 165ml coconut milk
  3. 1/4 cup water
  4. 1.5 tbs cocoa
  5. 1 tsp vanilla extract
  6. 2 tbs honey
  7. 1 tsp cinnamon
  8. 1 tbs desiccated coconut
  1. Soak the Chia seeds in water & coconut milk for a minimum of 30 minutes but up to 48 hours.
  2. Once the seeds have soaked and absorbed all the moisture stir vigorously (add extra water to get the "porridge" consistency that you like - I like mine the consistency of jelly that that has been stirred/mushed up a little)
  3. Add the cocoa, vanilla, honey, spices and coconut
  4. Stir until fully combined and smooth
  5. Serve with some berries and sprinkle some cinnamon over!
