Stuffed sweet potato boats

Hey strangers out there in the interwebs! its been looong! But in all fairness I have had a busy few weeks (isn’t that always the case!) BUT! I plan on baking a lot this weekend, not sure what yet… something yum I hope, so look out for that. In the mean time though, here is an awesome weekday recipe for an easy gluten-free, semi healthy meal :D

3 large sweet potatoes
1 onion
a tub of mini cherry tomatoes
pack of mushrooms (brown)
2 x chorizo sausage
5 tbsp tomato paste
cayenne pepper & paprika
grated cheese (I used about 1 cup white cheddar)

Cut the sweet potatoes into halves and scoop out the middle (I suggest saving the scooped bit for making a puree or adding to a soup – or even add it to your filling!) I made sure that there was about 1.5cm wide around the edges.
Chop & fry the onion.
Add the mushrooms, then the chorizo and the tomatoes.
Add some spices – to taste.
Add the tomato paste and stir over a medium heat until the filling is coated nicely in the tomato sauce.
Spoon the filling into your hollowed out boats, sprinkle with grated cheese and bake for an 1.5 hours. (1 hour 30 minutes).

I served mine with a bit of the extra filling on the side… yum! :)

Ooohh oh and I just chatted to a friend of mine that is ordering me the hardcover double volume set of Julia Child’s Mastering the Art of French Cooking, apparently it will take a good few weeks (thank goodness so I can save up) but when it arrives I will be sure to start posting some of those more tricky and deliciously amazing recipes!!! Here’s to learning some mad kitchen skills.

OH also, I am super bummed that I am missing the entire season of SA Masterchef, does anyone know of a way to watch it online or download it somewhere??
