One thing I LOVE, love love love is a good PIE. I love cottage pie, pastry pie, pot pie, fold-overs, tarts, pies that aren’t even really pies at all… And I swear, if you put your mind to it, you can spin any traditional favourite into a healthy dish. That’s what I tried here. Good old chicken pie turned SUPER >> a super-food pie!!
Helloooooo! So I am actively trying to post more dinner / main dishes cause I know that what most people struggle with is the day-to-day stuff. Making treats and fancy pancy breakfasts, and all that jazz, is all well and good… but when you come home to steamed chicken and beans in the evening, all of the paleo brownies in the world will not make it better.
So this very successful banana bread recipe was the favourite of the day – SO easy and quick, only 2 dirty dishes including the loaf pan! What I do as well, with most of the paleo stuff I bake, is I cut it up and freeze it the day it’s made and then just take out a slice when I want, defrost/toast/pop it in the oven. That way you can eat everything at your leisure without worrying about things going stale, or alternatively non-healthy-orientated-people eating your hard earned paleo goodies.
