There is a massive vegan movement happening around the world at the moment. I think more and more people are becoming aware of the impact that the animal agriculture industry is having on the environment. Both Kyla and myself have not made the move to complete vegan lifestyle, however we both believe in minimising meat consumption and being aware of what we eat and how it affects both our bodies and the world in general.
One thing I LOVE, love love love is a good PIE. I love cottage pie, pastry pie, pot pie, fold-overs, tarts, pies that aren’t even really pies at all… And I swear, if you put your mind to it, you can spin any traditional favourite into a healthy dish. That’s what I tried here. Good old chicken pie turned SUPER >> a super-food pie!!
These are the perfect thing to make for a lazy Sunday morning when all you really want to do is stay home and turn your phone off! This is a relatively healthy version of actual pancakes, skip the honey/syrup if you don’t do added fructose/glucose and add whatever accoutrements you have in your cupboard.
So – the brownies. They are not super low-cal, so for weight loss just don’t eat the entire batch, in one sitting, by yourself ;) but they are low-carb, refined sugar free and pretty damn delicious. And they freeze super well.
